Zupa's Wiconsin Cauliflower Soup

I love being able to find out how to make things from restaurants.  It is just so much cheaper to make things at home instead of going out to eat.  Last night, I decided to make a recipe for Zupa's Wisconsin Cauliflower Soup.  I got the link for the recipe from a friend on Facebook and I'm glad I decided to try it out.  It was so delicious!  The only thing missing from our Zupa's meal was a chocolate covered strawberry.  It was a very easy meal and didn't take a lot of effort.  It was perfect for a cold, snowy evening.

Wisconsin Cauliflower Soup

2 tablespoon butter or margarine
1 medium onion, chopped
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups milk
1 1/2 cups water
1 can (13 3/4 to 14 1/2 ounces) chicken broth
1 head (2 1/2 pounds) cauliflower, cut into 1-inch chunks
1 teaspoon Dijon mustard (I just used normal mustard...you can't really even taste it)
1 cup sharp cheddar cheese, shredded
1 cup Colby Jack cheese, shredded

In a large saucepan, melt margarine or butter over medium heat. Add onion and cook until golden, about 10 minutes, stirring occasionally. Whisk in flour and salt. Gradually stir in milk, chicken broth, and water.
Add cauliflower and heat to boiling over high heat. Reduce heat to low; cover and simmer until cauliflower is tender, about 15 minutes. In blender, blend cauliflower mixture at low speed in small batches until very smooth. 

Return cauliflower mixture to saucepan; heat over medium heat until hot, stirring occasionally. Remove saucepan from heat; stir in mustard and 1 1/2 cups cheese until melted and smooth. Serve soup with remaining cheese as a garnish.  Add bacon if wanted as well.

 For a dessert, I made these yummy cookies.  Just take a basic chocolate chip cookie recipe (it can be any of your choice) and add cut up Reese's peanut butter cups and Rolo candies into the dough.  Bake as normal and enjoy!! They were pretty tasty, if I do say so myself.
